There's some thing here in the south about black eyed peas being the first thing you eat on New Years or something? I don't get it. Anyone care to clarify?
I'd be glad to clarify, Susan. In the South one eats black-eyed peas on New Year's Day because you get a day of good luck for every pea you eat. This is why it is so important to not be hungover on New Year's Day, because you get a day of bad luck for every pea you subsequently vomit back up.
I always eat my black-eyed peas in Hopping John. Here's what you do:
Dice a green bell pepper, a red bell pepper, and a sweet onion. Brown in a dutch oven with a ham hock until tender. Then add 2 cups of dried black-eyed peas (soak for 24 hours beforehand), one cup of white rice, and 2 cups of water. Simmer for 20 minutes. Serve with your meat entree and corn bread. I crock a Boston Butt myself. It compliments the ham hock.
It is very important to spice up the Hopping John with hot sauce. I use Tabasco, but whatever your palate prefers is fine.
