MY BLOG UNCLE

has a great post going on Southern Food. I'd have weighed in earlier but my ass has been working like the mulatto sharecropper I shoulda been borned as. Acidman's list is my list, although I perversely still call low country boil Frogmore Stew, like Franc White taught me. I learned to overcome the cholesterol problem by buying an extra pepper grinder. I filled it with Lipitor, and when I season I just go medium with that.

Thing is, growing up, we never considered what we were eating as "Southern Food," it was just food, like didn't everyone eat like that?

And since my granma was taught by the cook that my great-granma had, and my mom was taught by my daddy (who learned from my granma's cook), I guess I grew up on what is known as "Soul Food."

Same food that I have been known to fix myself.

Tonite because of all that food goin' around, I decided to fix a ham (with brown sugar and mustard rubbed in), macaroni & cheese (naturally homemade), and fresh green beans (cooked with fatback)...yummy meal.

Sounds like a very sweet dinner, Laura. I had spare ribs, gently rubbed with my dry sauce, then vehemently slathered with my wet sauce at the optimal moment. I beat the ribs with a tire iron before applying the dry sauce just in case there's any perspicacity left in them. Works for me.

Next time you decide to grill ribs, not country ribs, but pork spareribs try this:

Rub sea salt and fresh ground black pepper on the ribs.

Just brush WHITE vinegar while grilling.

And that's all...

It is absolutely delicious, the meat just flakes off of the bone, and it's, it's just soooooo good!
